- Flour in 50s. You have sent 25-pound bags three deliveries running, first one 17 December, again 8 January, again 21 January. The 25s run $0.041 a pound over the 50s and I have one bag-rack, sixteen inches deep, which takes eight 50s and will not take fourteen 25s standing. I am ordering to the 50-pound pack and I will refuse the 25s at the rail.
- Meat line is bone-in weight, not plate weight. Chuck roll yields 0.60 to the plate. Ninety pounds plate wants a hundred fifty pounds on the order. Ship it as it hangs and do not trim it for me.
- Four shipyard fitters aboard are victualled against Job 6-2214, yard's account, not the vessel's — see lines 2, 5, 9 and 21, ticked. They are working the number two hold at twelve degrees and they are rationed at the cold-work rate, which is why my meat and my potato figures are up against a fifteen-man boat underway.
- Walk-in compressor cut out twice today, 1120 and 1545, no cause found. Until the suction line is felt in the morning I am ordering dry at fourteen days' surplus and short on the box. If the reading beside the perishables panel is over 42 when your driver comes, cut the milk and the produce off this order and leave the dry.
- One fitter, D. Ruszkowski, cannot take wheat in any form. Separate small order, off the printed sheet because the sheet has no column for it: 8 lb rice flour, 4 lb potato starch, 2 lb cornstarch, 6 lb long-grain rice. Small bags. Do not substitute wheat starch, it is wheat.
STANDING INSTRUCTIONS. 1. This requisition shall be made out in triplicate, the top copy to the Company's agent at the port of delivery, the duplicate to the Marine Superintendent with the monthly returns, and the pink copy retained aboard until the delivery receipt at foot is completed and signed. 2. Quantities shall be computed on the man-day basis, being the total souls victualled multiplied by the number of days for which stores are required, and shall not be computed by the case. 3. The standing shipboard allowance per man per day shall be taken as one (1) pound of meat bone-in, three-quarters (0.75) pound of flour, one-half (0.50) pound of potatoes and one (1) quart of fresh milk, with such further allowances as are printed against the several lines hereunder. 4. Where a line is subject to loss by bone, trim, peel or shrink, the quantity ordered shall be the plate requirement divided by the stated yield and not the plate requirement itself. 5. Men employed at cold work, whether of the vessel's complement or of a contractor's, shall be victualled at the cold-work multiplier stated in the box above, and where victualled against a contractor's account the job number shall be entered in the remarks column against every line so charged. 6. Canned, dried and farinaceous stores shall be carried at not less than fourteen (14) days' surplus over the period requisitioned, irrespective of the expected duration of the lay-up. 7. Bread is baked aboard and shall not be requisitioned as such. 8. Eggs are supplied in the case of thirty (30) dozen, which is the smallest unit the agent will break, and no part case shall be ordered or expected. 9. No perishable store shall be requisitioned against a refrigerating box whose operation is in doubt. 10. Nothing shall be carried over the side. Any store condemned shall be entered on Form S 119 with the reason and the weight.
