What I know before I smell anything

The Kambos lot was picked green and pressed the same day. Green fruit gives you the pepper. It is the most pungent of the four — in the throat, not on the tongue. Nothing green is fusty.
The Vromovrysi lot hung until it fell off. Late fruit is mild: it is the least bitter of the four. That is the only thing mildness proves.
Ano Rema went through cold, no hot water on the paste, so it keeps its volatiles. Warmed, it is the fruitiest of the four on the nose.
Kambos is bitterer than the Pigadia blend. Half of Pigadia is Yerakaris' fruit and Yerakaris' fruit has never been bitter in its life.
Fruit stood in the yard at Vromovrysi and at Pigadia. One of those two is fusty. One. Not both.
One tank sat half empty all week and has gone rancid — putty, old walnuts. Not Kambos; Kambos went straight into a full tank.
Bitter = tongue. Pungent = throat, it makes you cough. Two compounds, two sensations. Mix them up and everything after is wrong.
