To the evening crew: this book lives behind the register. Read it before your first table. When Mr. Halloran walks in at 5:15 you should already be reaching for the decaf. When the Petersons take booth 3 you should already know to bring two extra napkins for the boy. This is how we do the job here.

Add new regulars to the back when you notice a pattern — three visits same time, same order. Don't guess. Watch.
